About the Experience

For thousands of years, Jordan has been at the epicenter of olive oil cultivation and production, and the olive harvest season is among the most magical and resplendent times of year to visit the Kingdom.

During this unforgettable journey, you will experience the incredible richness of some of Jordan’s most incredible culinary traditions, visiting local olive oil farms in Ajloun, Madaba, and Karak; discovering the art of olive oil tasting; and sampling a wide array of local food and wine during a series of pop-up lunch and dinner experiences in some of the country’s most breathtaking locations.

Along with olive oil, you’ll learn about other local, seasonal harvests, like pomegranate, winter squash, and eggplant. For culinary afficionados, this delicious four-day experience is sure to provide memories that will last a lifetime.

Nico Dingemans is the founder of Hospitality in Health, a boutique consultancy that works with clients across the globe to deliver bespoke hospitality and tourism solutions, with a specialized focus on sustainable culinary tourism, health cuisine, and hospitality education. He is also the founder of From Farm to Fork in Jordan, an initiative that works to highlight and elevate Jordan’s rich culinary history through storytelling.
